Easy Sheet Pan Sticky Teriyaki Chicken

Make a flavorful, sticky teriyaki chicken dinner on one pan for simple cleanup on a busy weeknight.

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/4 cup packed brown sugar
  • 1/4 cup mirin (rice wine vinegar)
  • 2 tablespoons grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1 tablespoon sesame oil (for drizzling)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius). Line a large baking sheet with parchment paper for easy removal.
  2. In a small bowl, whisk together the soy sauce, 1/2 cup water, brown sugar, mirin, ginger, and garlic. This is your base sauce.
  3. Place the chicken pieces on the prepared baking sheet in a single layer.
  4. Pour half of the base sauce mixture over the chicken, tossing gently to coat. Reserve the remaining half of the sauce.
  5. Bake the chicken for 15 minutes.
  6. While the chicken bakes, prepare the thickening slurry: In a small cup, whisk the cornstarch and 2 tablespoons of cold water until smooth.
  7. Remove the chicken from the oven. Pour the reserved base sauce into a small saucepan. Bring the sauce to a simmer over medium heat.
  8. Whisk the cornstarch slurry into the simmering sauce. Continue to cook, stirring constantly, until the sauce thickens significantly, about 1 to 2 minutes. It should coat the back of a spoon. This is your sticky glaze.
  9. Brush or drizzle about two-thirds of the sticky glaze over the partially cooked chicken on the pan.
  10. Return the pan to the oven and bake for another 5 to 8 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit).
  11. Remove from the oven. Drizzle the remaining sticky glaze over the hot chicken. Drizzle with sesame oil and sprinkle with sesame seeds before serving.

Notes

  • You can add chopped broccoli or sliced carrots to the sheet pan alongside the chicken for a complete meal. Add them before the first bake.
  • For extra sticky results, you can briefly broil the chicken for the last 1-2 minutes, watching closely to prevent burning.
