1 cup creamy peanut butter
1/2 cup powdered sugar
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a medium bowl, combine the rolled oats, peanut butter, powdered sugar, melted butter, and vanilla extract. Mix well until everything is evenly incorporated and the mixture holds together when pressed.
Press the oat mixture firmly and evenly into the prepared pan. Use the bottom of a glass or measuring cup to pack it down tightly.
In a separate microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each interval, until the chocolate is smooth and fully melted.
Pour the melted chocolate mixture over the oat base. Spread it evenly across the top layer.
Refrigerate the bars for at least 2 hours, or until the chocolate topping is completely firm.
Use the parchment paper overhang to lift the bars from the pan. Cut into 16 squares before serving.
Notes
For firmer bars, place the pan in the freezer for 30 minutes instead of the refrigerator.
You can substitute almond butter for peanut butter if you prefer a different nut flavor.
To make these bars gluten-free, use certified gluten-free rolled oats.
