You can make rich, smooth homemade mayonnaise in minutes using just five simple ingredients. This quick blender recipe guarantees creamy results every time, tasting much better than store-bought versions. Use this fresh condiment for sandwiches, salads, and dips.

  • 1 large egg yolk, room temperature
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon white wine vinegar
  • 3/4 cup neutral oil (like canola or light olive oil)
  • Pinch of salt

Instructions

  1. Place the egg yolk, Dijon mustard, lemon juice, and vinegar into the container of an immersion blender or a small, narrow blender jar.
  2. Blend these ingredients together for about 10 seconds until they are combined and slightly pale.
  3. With the blender running continuously on medium speed, slowly drizzle the oil into the mixture in a very thin, steady stream. This slow addition is key to preventing separation.
  4. Continue blending and slowly adding the oil until about half of the oil is incorporated and the mixture begins to thicken significantly.
  5. Once it thickens, you can increase the oil stream slightly faster, but still add it slowly while the blender runs.
  6. Stop blending once all the oil is added and you have thick, creamy homemade mayonnaise.
  7. Stir in the salt to taste. If the mayo is too thick, you can blend in a few drops of water until you reach your desired consistency.

Notes

  • Use room temperature ingredients, especially the egg yolk, to help the emulsion form correctly.
  • If your mayonnaise separates (looks runny), place one teaspoon of water or another egg yolk in a clean bowl and slowly whisk the broken mixture into it, drop by drop, until it re-emulsifies.
  • This fresh condiment is best used within one week when stored in an airtight container in the refrigerator.
