A recipe for a traditional baked custard pie featuring a creamy, silky filling flavored with vanilla and topped with nutmeg.

  • 1 (9 inch) unbaked pie crust
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 2 cups whole milk
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Place the unbaked pie crust on a baking sheet.
  2. In a medium bowl, whisk the eggs lightly.
  3. Add the sugar, salt, vanilla extract, and nutmeg to the eggs. Whisk until just combined.
  4. Slowly whisk in the whole milk until the mixture is smooth.
  5. Pour the custard mixture into the unbaked pie crust.
  6. Brush the top of the custard lightly with the melted butter.
  7. Bake for 45 to 55 minutes, or until a knife inserted near the center comes out clean. The center should be mostly set but may have a slight jiggle.
  8. Cool the pie completely on a wire rack before slicing.

Notes

  • For a smoother filling, strain the custard mixture through a fine-mesh sieve before pouring it into the crust.
  • If the crust edges begin to brown too quickly during baking, cover them loosely with aluminum foil.
  • This pie tastes best when served chilled or at room temperature.
