Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch strips
1 cup cornflakes, crushed finely
1/2 cup all-purpose flour
2 large eggs, beaten
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
Cooking spray
Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
Set up a three-stage breading station. Place the flour in the first shallow dish. Mix the beaten eggs in the second dish. In the third dish, combine the crushed cornflakes, salt, pepper, garlic powder, and paprika.
Take one chicken tender strip and dredge it thoroughly in the flour, shaking off any excess.
Dip the floured strip into the egg wash, allowing excess to drip off.
Press the strip firmly into the cornflake mixture until it is completely coated. Press the coating on to help it adhere.
Place the coated tender on the prepared baking sheet. Repeat with the remaining chicken strips, ensuring they do not touch.
Spray the tops of the coated tenders generously with cooking spray for extra browning.
Bake for 15 to 20 minutes, flipping the tenders halfway through the cooking time, until the internal temperature reaches 165 degrees Fahrenheit and the crust is golden brown and crisp.
Serve immediately.
Notes
For the best crunch, crush the cornflakes using a food processor or by placing them in a zip-top bag and crushing them with a rolling pin.
If you prefer a slightly thinner coating, you can skip the flour dredge step, but the coating may adhere less well.
Baking on a wire rack placed over the baking sheet helps air circulate underneath, promoting crispiness on the bottom side.
