Make fun, no-bake bars inspired by the Cookie Monster, featuring a bright blue color and chunks of chocolate chip cookies.

  • 6 cups crispy rice cereal
  • 1 package (10 ounces) marshmallows
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Blue gel food coloring (enough to reach electric blue)
  • 1 cup mini chocolate chip cookies, roughly chopped
  • 1/2 cup candy eyeballs or small chocolate chips for decoration

Instructions

  1. Lightly grease a 9×13 inch baking pan. Set aside.
  2. In a large saucepan over low heat, melt the butter.
  3. Add the marshmallows to the melted butter. Stir constantly until the marshmallows are completely melted and smooth. Remove the pan from the heat.
  4. Stir in the vanilla extract and several drops of blue gel food coloring until you achieve a vibrant blue color.
  5. Add the crispy rice cereal to the marshmallow mixture. Stir quickly until the cereal is evenly coated with the blue mixture.
  6. Fold in the chopped mini chocolate chip cookies.
  7. Transfer the mixture to the prepared baking pan. Lightly press the mixture into an even layer using a piece of wax paper or lightly buttered spatula. Do not pack too tightly.
  8. Immediately press the candy eyeballs onto the top surface of the bars.
  9. Let the bars cool and set completely at room temperature for about 1 hour.
  10. Once set, cut the mixture into squares or rectangular bars.

Notes

  • Use gel food coloring for the most intense color without thinning the marshmallow mixture.
  • If you do not have candy eyeballs, you can use small chocolate chips to represent eyes or pipe small dots of melted chocolate.
  • For cleaner cuts, lightly grease your knife before slicing the cooled bars.
