1 1/4 cups all-purpose flour
1/2 teaspoon salt
8 tablespoons cold unsalted butter, cut into cubes
3-4 tablespoons ice water
4 medium apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
2 tablespoons granulated sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 tablespoon apricot jam, warmed (for glaze)
Instructions
Prepare the crust: In a bowl, combine the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Add the ice water one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap it in plastic, and chill for at least 30 minutes.
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
On a lightly floured surface, roll the chilled dough into a rough 12-inch circle. Transfer the dough to the prepared baking sheet.
In a separate bowl, gently toss the sliced apples with the granulated sugar, lemon juice, and cinnamon.
Arrange the apple slices over the dough, leaving a 1 1/2-inch border around the edge. Fold the border up over the apples to create a rustic edge.
Bake for 30 to 35 minutes, or until the crust is golden brown and the apples are tender.
While the tart is still warm, brush the top of the apples with the warmed apricot jam for a light glaze. Let cool slightly before slicing and serving.
Notes
Use firm, slightly tart apples like Granny Smith for the best texture and flavor balance.
If you prefer a quicker version, substitute the homemade crust with one sheet of store-bought puff pastry.
For extra richness, sprinkle 1 tablespoon of turbinado sugar over the apples before baking.
