Make a rich, creamy Zuppa Toscana soup at home using Italian sausage, potatoes, and kale in one pot.

Ingredients

  • 1 pound spicy Italian sausage, casings removed
  • 4 slices bacon, chopped
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound russet potatoes, peeled and thinly sliced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup whole milk (or almond milk for a lighter version)
  • 4 cups chopped kale, stems removed
  • Salt to taste

Instructions

  1. Cook the chopped bacon in a large pot or Dutch oven over medium heat until crisp. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pot.
  2. Add the Italian sausage to the pot. Cook, breaking it up with a spoon, until browned. Drain off excess grease.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the chicken broth. Add the sliced potatoes, thyme, and pepper. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  6. Stir in the heavy cream and milk. Heat through gently, but do not let the soup boil after adding the cream.
  7. Add the chopped kale and cook just until the kale wilts, about 3 to 5 minutes.
  8. Taste the soup and add salt as needed.
  9. Serve hot, garnished with the reserved crispy bacon pieces.

Notes

  • For a healthier option, substitute heavy cream with full-fat coconut milk or unsweetened almond milk.
  • If you prefer less spice, use mild Italian sausage instead of spicy.
  • You can prepare this recipe in a slow cooker by browning the sausage and bacon first, then adding all other ingredients (except cream/milk/kale) and cooking on low for 6-8 hours. Stir in cream/milk and kale during the last 30 minutes.
