15 ounces whole milk ricotta cheese
2 tablespoons olive oil
1 teaspoon lemon zest
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup hot honey, plus extra for drizzling
2 tablespoons chopped toasted walnuts or pecans
1 tablespoon fresh thyme leaves
Instructions
Place the ricotta cheese, olive oil, lemon zest, salt, and pepper into a food processor.
Process the mixture until it becomes completely smooth and light, about 2 to 3 minutes. Stop and scrape down the sides as needed.
Transfer the whipped ricotta to a shallow serving bowl.
Drizzle the 1/4 cup of hot honey evenly over the top of the dip.
Sprinkle the toasted nuts and fresh thyme leaves over the honey.
Serve immediately with crostini, pita chips, or fresh vegetables.
Notes
For extra flavor, you can make your own hot honey by gently warming 1/4 cup of honey with 1/2 teaspoon of red pepper flakes for 5 minutes, then strain.
If you do not have a food processor, use a high-powered blender or a stand mixer with the whisk attachment.
Toast your nuts in a dry skillet over medium heat for 3 to 5 minutes until fragrant before chopping.
