Hearty Roasted Veggie and Lentil Salad for Easy Meal Prep

Make this high-protein, fiber-packed roasted vegetable and lentil salad. It is perfect for vegetarian dinners or healthy make-ahead lunches.

  • 1 cup brown or green lentils, rinsed
  • 3 cups vegetable broth or water
  • 1 pound mixed root vegetables (carrots, sweet potatoes, parsnips), chopped into 1-inch pieces
  • 1 red onion, cut into wedges
  • 1 head broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon maple syrup
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Combine the rinsed lentils and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 20 to 25 minutes, or until lentils are tender but not mushy. Drain any excess liquid and set aside.
  3. On a large baking sheet, toss the chopped root vegetables, red onion wedges, and broccoli florets with olive oil, thyme, salt, and pepper. Spread them into a single layer.
  4. Roast the vegetables for 25 to 30 minutes, stirring halfway through, until they are tender and slightly caramelized.
  5. While the vegetables roast, whisk together the red wine vinegar, Dijon mustard, and maple syrup in a small bowl to make the dressing.
  6. In a large bowl, combine the cooked lentils and the warm roasted vegetables.
  7. Pour the dressing over the lentil and vegetable mixture. Toss gently to coat everything evenly.
  8. Stir in the fresh parsley. Serve warm or chill for later. This is great for lentil meal prep.

Notes

  • For extra flavor, add 1/2 teaspoon of smoked paprika to the vegetables before roasting.
  • This plant-based protein salad keeps well in the refrigerator for up to four days, making it a fantastic healthy make-ahead option.
  • If you prefer a grain bowl, serve this mixture over cooked quinoa or farro.
