A simple recipe for making a rich, moist, and entirely plant-based chocolate banana bread loaf.

Ingredients

  • 3 very ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/3 cup neutral oil (like canola or vegetable)
  • 1/4 cup plant milk (soy or almond recommended)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (or use 1:1 gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder
  • 1/2 cup vegan chocolate chips, plus extra for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, oil, plant milk, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cocoa powder.
  4. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just incorporated; do not overmix.
  5. Fold in the 1/2 cup of chocolate chips.
  6. Pour the batter into the prepared loaf pan. Sprinkle a few extra chocolate chips on top.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  8. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.

Notes

  • For a gluten-free version, substitute the all-purpose flour with a good quality 1:1 gluten-free baking blend.
  • If you prefer a less sweet bread, reduce the total sugar amount by 2 tablespoons.
  • Overripe bananas provide the best moisture and sweetness for this recipe.
