1 (15-ounce) can chickpeas, rinsed and drained
1/4 cup vegan mayonnaise
2 tablespoons finely chopped celery
1 tablespoon finely chopped red onion
1 teaspoon Dijon mustard
1 teaspoon apple cider vinegar
1/2 teaspoon dried dill
1/4 teaspoon turmeric (for color)
1/4 teaspoon Kala Namak (black salt, optional, for eggy flavor)
Salt and black pepper to taste
Bread, lettuce, and tomato for serving
Instructions
Place the rinsed and drained chickpeas in a medium bowl.
Use a potato masher or a fork to mash the chickpeas until they are mostly broken down but still have some texture remaining. You want a mix of creamy and chunky pieces.
Add the vegan mayonnaise, celery, red onion, Dijon mustard, apple cider vinegar, dill, turmeric, and Kala Namak (if using) to the bowl.
Stir all ingredients together until everything is well combined and the mixture is evenly coated.
Season with salt and pepper to your preference. Taste and adjust seasonings as needed.
Serve immediately on your choice of bread with lettuce and tomato, or chill for later use.
Notes
For a creamier texture, use slightly less celery or mash the chickpeas more thoroughly.
For a ‘tuna’ flavor, increase the Kala Namak slightly or add a small pinch of kelp granules.
This salad keeps well in an airtight container in the refrigerator for up to four days.
