1 cup rolled oats
1 ripe banana, mashed
1 cup unsweetened plant milk (almond or soy recommended)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon maple syrup (optional)

Instructions
Place the rolled oats in a blender. Blend until you create a fine oat flour consistency.
In a medium bowl, combine the oat flour, baking powder, baking soda, and salt. Whisk the dry ingredients together.
In a separate bowl, mash the ripe banana thoroughly. Add the plant milk and vanilla extract to the mashed banana and mix well.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are fine. If using, stir in the maple syrup now.
Heat a lightly oiled griddle or non-stick pan over medium heat.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 3 to 4 minutes per side, until bubbles appear on the surface and the edges look set. Flip carefully and cook the second side until golden brown.
Serve immediately with your favorite toppings.
Notes
For gluten-free pancakes, ensure you use certified gluten-free rolled oats.
If your batter seems too thick, add plant milk one tablespoon at a time until you reach your desired pouring consistency.
For extra fluffiness, let the batter rest for 5 minutes before cooking.
