Instructions
Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the softened butter to the dry ingredients. Beat with an electric mixer on low speed until the mixture resembles coarse sand.
In a separate small bowl, whisk together the eggs, 1 teaspoon vanilla extract, and milk until combined.
Pour half of the wet mixture into the dry ingredients and mix on medium speed until just combined. Scrape down the sides of the bowl.
Add the sour cream (or yogurt) and the remaining wet mixture. Mix on medium speed for about 30 seconds, then mix on low speed until the batter is smooth. Do not overmix to keep your cupcakes fluffy.
Divide the batter evenly among the 12 cupcake liners, filling each about two-thirds full.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
To make the frosting, beat the 1/2 cup softened butter until creamy. Gradually add the powdered sugar, mixing until smooth.

For the softest texture, make sure your milk, eggs, and sour cream are all at room temperature before you begin mixing.
