Make a comforting, savory pot pie using leftover turkey. This recipe features a rich, creamy filling and a double flaky pie crust.

  • 2 cups cooked, shredded turkey
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 refrigerated pie crusts (or 1 sheet puff pastry)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Place one pie crust into a 9-inch pie plate. Trim the edges.
  2. In a large saucepan, melt the butter over medium heat. Add the carrots, celery, and onion. Cook until softened, about 5 to 7 minutes.
  3. Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
  4. Gradually whisk in the chicken broth until smooth. Bring the mixture to a simmer, stirring until the sauce thickens.
  5. Stir in the heavy cream, cooked turkey, peas, corn, thyme, salt, and pepper. Heat through, about 2 minutes. Do not boil.
  6. Pour the filling into the prepared pie crust.
  7. Place the second pie crust over the filling. Crimp the edges to seal the top and bottom crusts together. Cut several slits in the top crust to allow steam to escape.
  8. Brush the top crust lightly with the beaten egg wash.
  9. Bake for 30 to 35 minutes, or until the crust is golden brown and the filling is bubbly. If the edges brown too quickly, cover them loosely with foil.
  10. Let the pot pie cool for 10 minutes before slicing and serving.

Notes

  • For an easier version, substitute the double pie crusts with one sheet of thawed puff pastry laid over the top of the filling.
  • If you do not have leftover turkey, you can use 1 pound of raw turkey breast, diced, and cook it in the saucepan before adding the flour.
  • If you prefer a thicker crust, chill the assembled pie for 15 minutes before baking.
