Make quick and flavorful Thai Peanut Noodles featuring a rich peanut sauce and a mix of crisp vegetables for satisfying texture.

  • 12 oz spaghetti or linguine noodles
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 3 tablespoons rice vinegar
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup hot water (or more, to thin)
  • 1 large carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded red cabbage
  • 1/2 cup snow peas, trimmed
  • 1/4 cup chopped scallions, for garnish
  • 2 tablespoons chopped peanuts, for garnish

Instructions

  1. Cook the noodles according to package directions. Drain them, rinse with cold water to stop cooking, and set aside.
  2. While noodles cook, prepare the peanut sauce. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, lime juice, ginger, and garlic.
  3. Gradually whisk in the hot water, one tablespoon at a time, until the sauce reaches a smooth, pourable consistency. Taste and adjust sweetness or acidity as needed.
  4. In a large bowl, combine the cooked, cooled noodles, julienned carrot, sliced red pepper, shredded cabbage, and snow peas.
  5. Pour the peanut sauce over the noodles and vegetables. Toss everything well until the noodles and vegetables are evenly coated.
  6. Divide the noodles into serving bowls. Garnish each serving with chopped scallions and chopped peanuts.

Notes

  • For a vegan option, use maple syrup instead of honey in the sauce.
  • To keep vegetables crunchy, do not cook them; add them raw to the cooled noodles.
  • Add cooked, cubed tofu or shredded chicken for extra protein.
  • If you prefer a thinner sauce, add more hot water until you reach your desired consistency.
