Follow these steps to make an easy, hearty breakfast casserole using tater tots, sausage, eggs, cheese, and peppers.

  • 1 pound breakfast sausage, cooked and drained
  • 1 (32 ounce) bag frozen tater tots, thawed slightly
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Spread the slightly thawed tater tots in an even layer across the bottom of the prepared baking dish.
  3. In a skillet over medium heat, cook the breakfast sausage, onion, and bell pepper until the sausage is browned and the vegetables are soft. Drain off any excess grease.
  4. Spread the sausage and vegetable mixture evenly over the layer of tater tots.
  5. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  6. Pour the egg mixture evenly over the sausage and tater tot layers.
  7. Sprinkle the shredded cheddar cheese over the top of the casserole.
  8. Bake for 40 to 45 minutes, or until the eggs are set and the cheese is melted and lightly golden brown.
  9. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 12 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
  • You can substitute bacon or ham for the sausage if desired.
  • If you prefer a crispier top, you can add a second layer of cheese during the last 10 minutes of baking.
