- 2 cups mashed cooked sweet potatoes (about 3 medium potatoes)
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 2 large eggs, lightly beaten
- 1/2 cup whole milk
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 unbaked 9-inch pie crust
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes and granulated sugar. Mix until smooth.
- Add the melted butter, beaten eggs, whole milk, evaporated milk, and vanilla extract to the sweet potato mixture. Stir well.
