Bake a moist, naturally sweetened banana bread without any added sugar. This recipe uses very ripe bananas and unsweetened applesauce for flavor and texture.

  • 3 very ripe medium bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted unsalted butter or coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups whole wheat flour (or all-purpose flour)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, applesauce, melted butter or oil, eggs, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just incorporated. Do not overmix.
  5. Fold in any optional nuts if you are using them.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

  • Use bananas that are heavily spotted or almost black for the best natural sweetness.
  • For a lower-carb option, substitute the whole wheat flour with 1 3/4 cups of blanched almond flour and add 1 teaspoon of xanthan gum.
  • If you prefer a sweeter taste without sugar, add 1/2 teaspoon of liquid stevia or monk fruit sweetener to the wet ingredients.
