Instructions
Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
Prepare the strawberries: In a small bowl, gently toss the diced fresh strawberries with 1/4 cup of flour until they are lightly coated. Set aside.
Make the dry ingredients: In a large bowl, whisk together 1 3/4 cups flour, granulated sugar, baking powder, and salt.
Make the wet ingredients: In a separate medium bowl, whisk together the melted butter, egg, 1/2 cup milk, and vanilla extract until combined.
Combine: Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine for fluffy muffins.
