Make creamy, homemade ice cream with strawberries and bananas without needing an ice cream maker.

  • 2 cups heavy whipping cream, cold
  • 1 (14 ounce) can sweetened condensed milk, cold
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and chopped
  • 2 ripe bananas, mashed
  • 1 tablespoon lemon juice (optional, for color)

Instructions

  1. Prepare the fruit: In a small bowl, combine the chopped strawberries, mashed bananas, and lemon juice if you are using it. Set aside.
  2. Whip the cream: In a large bowl, use an electric mixer to beat the cold heavy whipping cream until stiff peaks form. This usually takes 3 to 5 minutes.
  3. Combine base: Gently fold the cold sweetened condensed milk and vanilla extract into the whipped cream until just combined. Do not overmix.
  4. Fold in fruit: Gently fold the strawberry and banana mixture into the cream base. Mix until the fruit is evenly distributed but still shows streaks of color.
  5. Freeze: Pour the mixture into a freezer-safe container, such as a loaf pan or an airtight container. Cover the surface directly with plastic wrap to prevent ice crystals.
  6. Harden: Freeze for at least 6 hours, or until firm enough to scoop.

Notes

  • For a thicker texture, chill the sweetened condensed milk and heavy cream in the freezer for 15 minutes before starting.
  • If you prefer a smoother texture, pulse the fruit mixture briefly in a food processor before folding it in.
  • You can add 1/2 cup of miniature chocolate chips during the final fold for extra flavor.
