1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon vegetable oil
1 head broccoli, cut into florets
1 red bell pepper, sliced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/2 cup low-sodium soy sauce
1/2 cup water
1/4 cup brown sugar, packed
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon cornstarch
2 tablespoons cold water (for slurry)

Instructions
Mix the soy sauce, 1/2 cup water, brown sugar, rice vinegar, and sesame oil in a small bowl. Set aside.
Whisk the cornstarch and 2 tablespoons of cold water together in a separate small bowl to create a slurry. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
Add the broccoli florets and sliced bell pepper to the skillet. Stir fry for 3-4 minutes until slightly tender-crisp.
Add the minced garlic and grated ginger to the vegetables and cook for 30 seconds until fragrant.
Return the cooked chicken to the skillet.
Pour the prepared sauce mixture over the chicken and vegetables. Bring the sauce to a simmer.
Whisk the cornstarch slurry again and pour it slowly into the simmering sauce while stirring constantly. The sauce will thicken quickly into a glaze.
Cook for 1 minute until the sauce is thick and sticky, coating everything evenly.
Serve immediately over cooked rice.
Notes
For extra flavor, add 1 teaspoon of sriracha to the sauce mixture for a touch of heat.
If you prefer softer vegetables, steam the broccoli for 2 minutes before adding it to the stir fry.
Use chicken thighs instead of breasts for a richer flavor.
