Prepare quick shrimp coated in a thick, sweet, and slightly spicy glaze, served over steamed white rice.

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/2 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp grated fresh ginger
  • 1 tsp cornstarch
  • 2 tbsp water
  • 4 cups cooked white rice
  • Optional: Sesame seeds and chopped green onions for garnish

Instructions

  1. Cook the rice according to package directions. Keep warm.
  2. In a small bowl, whisk together the cornstarch and 2 tablespoons of water to create a slurry. Set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the minced garlic and ginger. Cook for 30 seconds until fragrant.
  5. Add the shrimp to the skillet. Cook for 2 to 3 minutes per side until pink and opaque. Do not overcook.
  6. Reduce the heat to medium. Pour in the sweet chili sauce, soy sauce, rice vinegar, and brown sugar. Stir to combine.
  7. Bring the sauce to a gentle simmer.
  8. Whisk the cornstarch slurry again and pour it slowly into the simmering sauce while stirring constantly.
  9. Continue to cook and stir for about 1 minute until the sauce thickens and becomes sticky, coating the shrimp well.
  10. Remove the skillet from the heat.
  11. Serve the sticky sweet chili shrimp immediately over the warm cooked rice. Garnish with sesame seeds and green onions if desired.

Notes

  • For extra flavor, you can add a squeeze of fresh lime juice to the sauce just before serving.
  • If you prefer a spicier glaze, add 1/2 teaspoon of sriracha or red pepper flakes with the other sauce ingredients.
  • Ensure your skillet is hot before adding the shrimp to get a good sear quickly.
