Follow these steps to make chicken drumsticks with crispy skin coated in a sweet and savory honey garlic glaze.

  • 2 lbs chicken drumsticks, patted very dry
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a wire rack set over a baking sheet.
  2. In a bowl, toss the dried drumsticks with olive oil, salt, pepper, and garlic powder until evenly coated.
  3. Arrange the drumsticks on the prepared baking sheet in a single layer.
  4. Bake for 25 minutes.
  5. While the chicken bakes, prepare the glaze: In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, and ginger. Bring the mixture to a simmer over medium heat.
  6. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens enough to coat the back of a spoon, about 1 minute. Remove from heat.
  7. After the initial 25 minutes of baking, flip the drumsticks. Brush half of the honey garlic glaze over the chicken.
  8. Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  9. Remove the chicken from the oven. Brush the remaining glaze over the hot drumsticks before serving immediately.

Notes

  • Patting the chicken skin completely dry before seasoning is key to achieving crispiness.
  • For extra crispiness, you can broil the chicken for the last 2-3 minutes, watching closely to prevent burning the glaze.
  • If you prefer an air fryer method, cook at 380°F (195°C) for 18-20 minutes, flipping halfway, then brush with glaze and cook for 2 more minutes.
