Make flavorful, restaurant-quality steak fajitas quickly using a simple skillet method. This recipe includes instructions for a sheet pan variation.

  • 1.5 lb skirt steak or flank steak, sliced against the grain into thin strips
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 2 tablespoons olive oil, divided
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • Tortillas, for serving
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. In a bowl, combine the sliced steak with 1 tablespoon of olive oil, lime juice, cumin, chili powder, paprika, oregano, garlic powder, salt, and pepper. Mix well and let it marinate for at least 15 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until it shimmers.
  3. Add the sliced onions and peppers to the hot skillet. Cook, stirring occasionally, for 5 to 7 minutes until they soften slightly and begin to brown. Remove the vegetables from the skillet and set them aside.
  4. Add the marinated steak to the hot skillet in a single layer if possible. Cook for 2 to 4 minutes per side until browned and cooked to your desired doneness. Do not overcrowd the pan; cook in batches if necessary for a good sear.
  5. Return the cooked vegetables to the skillet with the steak. Toss everything together for 1 minute to reheat.
  6. Warm your tortillas according to package directions.
  7. Serve the sizzling steak and vegetable mixture immediately in warm tortillas with your preferred toppings.

Notes

  • For a sheet pan method: Preheat your oven to 400 degrees F (200 C). Toss the marinated steak, peppers, and onions with 2 tablespoons of olive oil on a baking sheet. Roast for 12 to 15 minutes, stirring halfway through, until the steak is cooked.
  • Use skirt steak for the best texture in fajitas. Slice it thinly against the grain after cooking.
  • For extra flavor, add 1/2 teaspoon of cayenne pepper to the marinade.
