Instructions
Prepare the Marinade: In a medium bowl, whisk together the lime juice, 1 tablespoon of olive oil, soy sauce, Worcestershire sauce, chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, cayenne pepper (if using), salt, and pepper.
Marinate the Steak: Place the skirt steak in a large zip-top bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor. Do not marinate longer than 4 hours, as the acid can break down the meat too much.
Prep for Cooking: Remove the steak from the marinade, letting excess drip off. Discard the remaining marinade. Slice the steak thinly against the grain into bite-sized strips.
Cook the Vegetables: Heat 1 tablespoon of olive oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until shimmering. Add the sliced onions and bell peppers. Cook, stirring occasionally, for 5 to 7 minutes until they are tender-crisp and slightly charred. Remove the vegetables from the skillet and set them aside on a plate.
Sear the Steak: Add the sliced steak to the hot, empty skillet in a single layer (you may need to work in batches to avoid crowding the pan, which causes steaming instead of searing). Notes
For the best sizzling effect, use a cast-iron skillet and make sure it is very hot before adding the steak.
If you prefer a less intense flavor, reduce the chili powder to 2 teaspoons.
