1 pint fresh strawberries, hulled and sliced
4 ounces goat cheese, crumbled
1/2 cup pecans, toasted

1/2 teaspoon poppy seeds
Salt and black pepper to taste
Instructions
Prepare the vinaigrette: In a small bowl, whisk together the olive oil, white wine vinegar, honey, Dijon mustard, and poppy seeds. Season with salt and pepper. Set aside.
Toast the pecans: Place pecans in a dry skillet over medium heat. Cook for 3 to 5 minutes, stirring often, until fragrant. Remove from heat and let cool slightly.
Assemble the salad: Place the spring mix greens in a large bowl. Top with the sliced strawberries and crumbled goat cheese. Sprinkle the toasted pecans over the top.
