12 large white or cremini mushrooms
1 tablespoon olive oil
1 small shallot, minced
2 cloves garlic, minced
5 ounces fresh spinach, chopped
4 ounces feta cheese, crumbled
1/4 cup breadcrumbs (Panko preferred)
1 large egg, lightly beaten
1/4 teaspoon black pepper
Pinch of salt
Instructions
Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
Clean the mushrooms by wiping them with a damp cloth. Gently remove the stems and finely chop the stems.
Heat the olive oil in a skillet over medium heat. Add the chopped mushroom stems and minced shallot. Cook until softened, about 4 minutes.
Add the minced garlic and chopped spinach to the skillet. Cook until the spinach wilts completely, about 3 minutes. Remove from heat and let the mixture cool slightly.
In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, breadcrumbs, beaten egg, pepper, and salt. Mix until just combined.
Arrange the mushroom caps cavity-side up on the prepared baking sheet.
Spoon the filling evenly into each mushroom cap, mounding it slightly.
Bake for 18 to 20 minutes, or until the mushrooms are tender and the filling is lightly golden brown.
Serve warm.
Notes
If you want to prepare these ahead of time, fill the mushrooms and store them covered in the refrigerator for up to 24 hours before baking. Add 5 minutes to the baking time if baking directly from the refrigerator.
For a richer flavor, you can add 1/4 cup of grated Parmesan cheese to the filling mixture.
Use large mushroom caps, like Portobello or large white button mushrooms, as they hold the filling better.
