Spicy Turkey White Bean Chili

A recipe for a hot chili featuring lean ground turkey and white beans, prepared on the stovetop.

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced green chilies, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust for heat)
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (14.5 ounce) can chicken broth (low sodium)
  • 1 cup water
  • 1 tablespoon tomato paste
  • 1/4 cup chopped fresh cilantro, for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the minced garlic, cumin, oregano, cayenne pepper, black pepper, and salt. Cook for 1 minute until fragrant.
  5. Add the diced green chilies (both cans), rinsed beans, chicken broth, water, and tomato paste. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low.
  7. Simmer, uncovered, for at least 30 minutes, stirring occasionally, to allow the flavors to blend. For a thicker chili, simmer longer.
  8. Taste and adjust seasonings, adding more cayenne if you prefer more heat.
  9. Serve hot, garnished with fresh cilantro if desired.

Notes

  • You can substitute Great Northern beans with navy beans or Great White beans.
  • For a smokier flavor, use smoked paprika instead of some of the regular chili powder or add a dash of liquid smoke.
  • This chili freezes well for future meals.
