2 large ripe mangoes, diced
1/2 red onion, finely chopped
1 red bell pepper, diced
1 jalapeño pepper, seeded and minced (or 1/2 habanero for more heat)
1/2 cup fresh cilantro, chopped
Juice of 2 limes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Prepare all the vegetables and fruit: dice the mangoes, finely chop the red onion and bell pepper, and mince the jalapeño.
Place the diced mangoes, red onion, red bell pepper, minced jalapeño, and chopped cilantro into a medium mixing bowl.
Pour the lime juice and olive oil over the fruit and vegetable mixture.
Add the salt and black pepper.
Gently stir all ingredients together until they are evenly combined.
Taste the salsa and adjust seasoning if needed; add more lime juice for tang or more jalapeño for heat.
Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
For a milder salsa, remove all seeds and white membranes from the jalapeño or use only half. For hotter salsa, leave the seeds in or substitute with a habanero pepper.
This salsa pairs well with grilled fish tacos, chicken, pork chops, or plain tortilla chips.
Store leftover salsa in an airtight container in the refrigerator for up to 3 days. The texture may soften slightly over time.
