1 medium spaghetti squash
2 tablespoons unsalted butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
1/4 teaspoon salt
1/8 teaspoon black pepper
Pinch of nutmeg
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Cut the spaghetti squash in half lengthwise. Scoop out the seeds and stringy parts.
Place the squash halves cut-side down on a baking sheet lined with parchment paper.
Roast for 30 to 40 minutes, or until the flesh is tender when pierced with a fork.
Let the squash cool slightly. Use a fork to scrape the flesh into strands, resembling spaghetti. Set aside.
While the squash cools, prepare the sauce. Melt the butter in a medium saucepan over medium heat.
Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
Pour in the heavy cream. Bring the mixture to a gentle simmer, stirring occasionally. Reduce the heat to low.
Stir in the Parmesan cheese until the sauce is smooth and thickened.
Season the sauce with salt, pepper, and nutmeg.
Add the spaghetti squash strands to the saucepan with the Alfredo sauce. Toss gently to coat everything evenly.
Serve immediately, topped with extra Parmesan cheese if desired.
Notes
To prevent watery squash, do not rinse the strands after scraping them out. Pat them lightly with a paper towel if they seem excessively wet before adding them to the sauce.
For a lighter sauce, substitute half the heavy cream with whole milk, but the sauce will be thinner.
You can add cooked chicken or steamed broccoli florets to make this a complete meal.
