1 pound ground beef
1 medium onion, chopped
1 can (10.5 ounces) condensed cream of mushroom soup
1 can (10.5 ounces) condensed cream of celery soup
1 cup sour cream
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup milk
12 ounces egg noodles
2 cups shredded cheddar cheese, divided
1/2 cup crushed butter crackers (optional topping)
2 tablespoons melted butter (optional topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
In a large bowl, combine the cooked beef and onion mixture with the cream of mushroom soup, cream of celery soup, sour cream, salt, pepper, and milk. Mix well.
Cook the egg noodles according to package directions until al dente. Drain the noodles completely.
Add the drained noodles and 1 1/2 cups of the shredded cheddar cheese to the beef mixture. Stir gently to combine everything evenly.
Pour the mixture into the prepared baking dish.
If using a topping, mix the crushed crackers with the melted butter and sprinkle over the top of the casserole. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
Bake for 25 to 30 minutes, or until the casserole is hot and bubbly and the topping is lightly golden brown.
Let the casserole rest for 5 minutes before serving.
Notes
You can prepare this casserole completely, cover it, and refrigerate it for up to 24 hours before baking. Add about 10 minutes to the baking time if cooking directly from the refrigerator.
For extra flavor, add 1/2 cup of frozen peas or sliced mushrooms when mixing the ingredients.
Use any combination of condensed cream soups you prefer, such as cream of chicken.
