3-4 lb pork shoulder (Boston butt), trimmed
1 cup low-sodium chicken broth
1/2 cup soy sauce
1/2 cup honey
1/4 cup apple cider vinegar
4 cloves garlic, minced
1 tablespoon smoked paprika
1 teaspoon black pepper
1/2 teaspoon salt
Instructions
Place the pork shoulder in the bottom of your slow cooker.
In a separate bowl, whisk together the chicken broth, soy sauce, honey, apple cider vinegar, minced garlic, smoked paprika, black pepper, and salt until well combined.
Pour the sauce mixture over the pork shoulder in the slow cooker.
Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the pork is very tender.
Carefully remove the pork from the slow cooker and place it on a large cutting board or baking sheet.
Use two forks to shred the pork completely, discarding any large pieces of fat.
Skim any excess fat from the liquid remaining in the slow cooker.
Return the shredded pork to the slow cooker and toss it thoroughly with the honey garlic sauce.
Cook on the warm setting for 15 minutes to allow the meat to absorb the sauce before serving.
Notes
For thicker sauce, remove about 1 cup of the liquid after cooking and simmer it on the stovetop with 1 teaspoon of cornstarch mixed with 1 tablespoon of cold water until thickened.
Serve this pulled pork on hamburger buns or over rice.
You can substitute brown sugar for a portion of the honey if you prefer a deeper molasses flavor.
