Ingredients
Scale
1.5 lbs Italian sausage links (sweet or hot)
3 large bell peppers (red, yellow, green), sliced into 1-inch strips
1 large yellow onion, sliced into thick wedges
3 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
In a large bowl, combine the sliced bell peppers and onion wedges.
Drizzle the vegetables with 2 tablespoons of olive oil. Sprinkle with oregano, garlic powder, salt, and pepper. Toss until the vegetables are evenly coated.
Arrange the seasoned vegetables on one side of the prepared baking sheet.
Place the sausage links on the other side of the baking sheet, ensuring they have some space between them. Drizzle the sausages lightly with the remaining 1 tablespoon of olive oil.
Place the sheet pan in the preheated oven and roast for 25 to 30 minutes.
Halfway through cooking (around 15 minutes), flip the sausages and toss the vegetables lightly to promote even browning.
Continue roasting until the sausages are cooked through (internal temperature reaches 160 degrees Fahrenheit) and the vegetables are tender and slightly caramelized.
Remove from the oven and serve immediately.
Notes
You can use bratwurst or kielbasa instead of Italian sausage for different flavor profiles.
For a heartier meal, add 1 pound of cubed potatoes (toss them with the vegetables and oil) and increase the cooking time by 10 to 15 minutes, checking for tenderness.
Serve these sausage and peppers on crusty rolls, over cooked rice, or alongside roasted sweet potatoes.
If you prefer a spicier dish, add 1/4 teaspoon of red pepper flakes to the vegetable seasoning mix.
