1 (15-ounce) can chickpeas, rinsed and drained
1/2 cup tahini
1/4 cup fresh lemon juice
2 cloves garlic
1/2 teaspoon salt
1/4 cup olive oil, plus more for serving
1/2 cup roasted red peppers (from 1 large fresh pepper or 1 jar, drained)
2-4 tablespoons ice water (optional, for texture)
Pinch of smoked paprika for garnish
Instructions
If using fresh peppers, roast them whole over an open flame or under the broiler until the skin is completely blackened. Place the hot peppers in a bowl and cover tightly with plastic wrap for 10 minutes to steam. Peel off the skin, remove the seeds and stem. If using jarred peppers, drain them well.
Combine the drained chickpeas, tahini, lemon juice, garlic, and salt in a food processor. Process for 1 minute.
Scrape down the sides. With the motor running, slowly drizzle in the 1/4 cup of olive oil. Process for another 2 minutes until the mixture is thick.
Add the roasted red peppers. Process until the mixture is smooth, scraping down the sides as needed.
If the hummus is too thick, add ice water, one tablespoon at a time, while processing until you reach your desired creamy consistency.
Taste and adjust salt or lemon juice if necessary.
Transfer the hummus to a serving bowl. Drizzle with extra olive oil and sprinkle with smoked paprika before serving.
Notes
For the creamiest texture, process the tahini and lemon juice first until pale before adding other ingredients.
Using ice water helps emulsify the mixture and makes the hummus lighter.
Store leftover hummus in an airtight container in the refrigerator for up to 5 days.
Serve with pita bread, raw vegetables, or use as a sandwich spread.
