A simple recipe for roasting broccoli and sweet potatoes together on one pan for a tender-crisp and soft side dish.

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 large head of broccoli, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon maple syrup (optional, for slight glaze)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the cubed sweet potatoes and broccoli florets.
  3. Drizzle the vegetables with olive oil. Add the kosher salt, black pepper, garlic powder, and smoked paprika. If using, add the maple syrup now.
  4. Toss everything together until the vegetables are evenly coated with oil and seasonings.
  5. Spread the seasoned vegetables onto the prepared baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary to ensure proper roasting instead of steaming.
  6. Roast for 20 minutes.
  7. Remove the pan from the oven and gently toss the vegetables. The sweet potatoes should be starting to soften.
  8. Return the pan to the oven and roast for another 10 to 15 minutes, or until the sweet potatoes are tender when pierced with a fork and the broccoli edges are slightly browned and crisp.
  9. Remove from the oven and serve immediately.

Notes

  • For even cooking, cut the sweet potatoes into pieces slightly smaller than the broccoli florets, as potatoes take longer to cook.
  • If you prefer a tangier flavor, substitute the maple syrup with 1 teaspoon of apple cider vinegar tossed with the vegetables before roasting.
  • These vegetables store well in an airtight container in the refrigerator for up to 4 days. Reheat in the oven for best texture.
