You will love this creamy, old-fashioned rice pudding made simply on the stovetop. It is the ultimate comfort food dessert, flavored with vanilla and cinnamon.

  • 1 cup short-grain white rice (Arborio works well)
  • 4 cups water
  • 1 teaspoon salt
  • 4 cups whole milk
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon, plus extra for topping

Instructions

  1. Combine the rice, water, and salt in a heavy-bottomed saucepan. Bring this mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover the pan, and simmer for 15 minutes, or until the water is mostly absorbed. Stir occasionally to prevent sticking.
  3. Add the whole milk to the saucepan. Increase the heat to medium-low and bring the mixture to a gentle simmer, stirring frequently. Do not allow it to boil over.
  4. Continue to cook, stirring often, for 45 to 60 minutes. The pudding thickens as the rice releases starch and absorbs the milk. You are aiming for a thick, creamy texture.
  5. When the pudding reaches your desired thickness (it will thicken more as it cools), remove the pan from the heat.
  6. Stir in the granulated sugar and vanilla extract until fully dissolved.
  7. Remove the pan from the heat and stir in the 1/2 teaspoon of ground cinnamon.
  8. Serve the rice pudding warm, or transfer it to a container and chill it completely for a cold, thick rice pudding dessert. Sprinkle with extra cinnamon before serving.

Notes

  • For an ultra-creamy result, stir the pudding every few minutes during the milk simmering stage. This agitation helps release the starch from the rice grains.
  • If you prefer a thinner consistency, add an extra splash of milk when you remove it from the heat.
  • This makes a wonderful make-ahead dessert; store it covered in the refrigerator for up to four days.
