Ingredients
Scale
1 cup cooked corned beef, chopped
1 cup shredded Swiss cheese
1/2 cup sauerkraut, well-drained and squeezed dry
1/2 cup mayonnaise
1/4 cup Thousand Island dressing
1/4 cup cream cheese, softened
1/4 cup shredded Gruyere cheese (optional, for extra flavor)
1 teaspoon Dijon mustard
Rye bread slices or sturdy crackers, for serving
Instructions
Prepare your slow cooker by lightly coating the inside with cooking spray or butter.
In a medium bowl, combine the chopped corned beef, Swiss cheese, sauerkraut, mayonnaise, Thousand Island dressing, softened cream cheese, Gruyere cheese (if using), and Dijon mustard. Mix until all ingredients are evenly incorporated.
Transfer the mixture to the prepared slow cooker.
Cook on LOW for 1.5 to 2 hours, stirring halfway through, until the dip is hot and completely melted and creamy. Alternatively, cook on HIGH for 1 hour.
Once heated through, transfer the dip to a serving bowl if desired, or serve directly from the slow cooker to keep it warm.
Serve immediately with toasted rye bread slices or your favorite sturdy crackers for scooping.
Notes
Make sure you squeeze the sauerkraut very dry before adding it; excess liquid can make the dip watery.
For an extra layer of flavor, toast your rye bread slices lightly before serving.
If you do not have a slow cooker, you can bake this dip in an oven-safe dish at 350 degrees Fahrenheit for 20 minutes, stirring halfway.
