You can make incredibly soft and chewy red velvet cookies fast using just a boxed cake mix. This simple recipe delivers vibrant color and rich flavor with minimal effort, perfect for holidays or a quick treat.

Ingredients

Scale
  • 1 box (15.25 ounces) Red Velvet Cake Mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup white chocolate chips (optional inclusion)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, combine the entire box of red velvet cake mix, the two eggs, and the vegetable oil. Mix with a hand mixer or a sturdy spoon until the dough comes together. Do not overmix.
  3. If you are using them, gently fold in the white chocolate chips.
  4. Measure out tablespoons of dough and roll them into balls. If you want a crinkle effect, roll the dough balls in powdered sugar before placing them on the prepared baking sheets.
  5. Place the dough balls about 2 inches apart on the baking sheets.
  6. Bake for 9 to 11 minutes. The edges should look set, but the centers will still look slightly soft. These are **chewy cake mix cookies**, so do not overbake them.
  7. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For a richer, slightly denser cookie, you can substitute the 1/2 cup of vegetable oil with 1/2 cup of melted butter.
  • If you want extra fluffy cookies, replace the oil with 1/2 cup of thawed Cool Whip. Mix this in gently at the end.
  • If you skip the powdered sugar coating, you can chill the dough for 30 minutes for slightly thicker cookies, though this recipe works well without chilling.
  • These cookies are fantastic for Valentine’s Day or Christmas cookie platters.
