Ingredients
Scale
3 cups shredded carrots
2 tablespoons fresh lime juice
1 tablespoon sesame oil
1 tablespoon soy sauce or tamari
1 teaspoon honey or maple syrup
1/2 teaspoon grated fresh ginger
1/4 teaspoon garlic powder
1 tablespoon toasted sesame seeds
Instructions
Place the shredded carrots into a medium bowl.
In a small bowl, whisk together the lime juice, sesame oil, soy sauce, honey or maple syrup, ginger, and garlic powder until combined. This is your tangy carrot salad dressing.
Pour the dressing over the shredded carrots.
Toss everything together until the carrots are evenly coated.
Sprinkle the toasted sesame seeds over the salad before serving.
Notes
For a different texture, use a vegetable peeler to create carrot ribbons instead of shredding.
This salad works well for meal prep; store the dressing separately and combine just before eating for maximum crunch.
Add a pinch of red pepper flakes to the dressing for a little heat.
