1.5 lb boneless, skinless chicken breast, cut into 1-inch pieces
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chicken broth
2 tablespoons fresh parsley, chopped
Instructions
Place the cubed chicken in a bowl. Season with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken pieces to the skillet in a single layer. Cook for 5 to 7 minutes, turning occasionally, until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the sauce simmer for 1 minute.
Return the cooked chicken to the skillet. Toss the chicken to coat completely in the garlic butter sauce.
Remove from heat. Stir in the fresh parsley. Serve immediately.
Notes
For a Parmesan version, stir in 1/4 cup grated Parmesan cheese with the parsley at the end.
If you prefer crispier edges, cook the chicken in two batches instead of crowding the pan.
This recipe works well for meal prep; store the chicken and sauce separately if preparing ahead.
