1 cup low-fat cottage cheese
1 scoop vanilla or chocolate protein powder (whey or casein works best)
1/4 cup unsweetened almond milk (or milk of choice)
1/2 teaspoon vanilla extract
Instructions
Place the cottage cheese, protein powder, almond milk, and vanilla extract into a high-powered blender.
Blend on low speed initially, using the tamper to push the ingredients down toward the blades.
Increase the speed to high and blend until the mixture is completely smooth and creamy, scraping down the sides as needed. This may take 1-2 minutes.
Transfer the mixture to a freezer-safe container.
Freeze for at least 3 to 4 hours, or until firm enough to scoop like traditional ice cream.
Let the protein ice cream sit on the counter for 5-10 minutes before scooping to reach the perfect texture.
Notes
For a thicker, more scoopable texture, use casein protein powder, as it absorbs more liquid.
If you want a lower sugar ice cream, use unflavored protein powder and add a few drops of liquid stevia or monk fruit sweetener to taste.
To make this a chocolate protein ice cream, use chocolate protein powder and add 1 tablespoon of unsweetened cocoa powder.
If your blender struggles, add milk one tablespoon at a time until the blades move freely.
