3 lbs pork shoulder, cut into 1-inch cubes
1 large onion, chopped
4 carrots, peeled and cut into 1-inch pieces
4 celery stalks, cut into 1-inch pieces
4 medium potatoes, peeled and cubed
4 cups beef broth
1 (14.5 oz) can diced tomatoes, undrained
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons all-purpose flour (optional, for thickening)
Instructions
Place the cubed pork shoulder, onion, carrots, celery, and potatoes into the slow cooker.
In a separate bowl, whisk together the beef broth, diced tomatoes, minced garlic, Worcestershire sauce, thyme, salt, and pepper.
Pour the liquid mixture over the pork and vegetables in the slow cooker.
Cover and cook on low for 7 to 8 hours or on high for 3 to 4 hours, until the pork is very tender.
If you prefer a thicker stew, mix the flour with 1/4 cup of cold water to create a slurry. Stir the slurry into the stew during the last 30 minutes of cooking.
Taste and adjust seasoning before serving.
Notes
For richer flavor, sear the pork cubes in a hot skillet with a little oil before adding them to the slow cooker.
You can substitute sweet potatoes for regular potatoes for a slightly sweeter taste.
If you do not have beef broth, use chicken broth or water mixed with a bouillon cube.
