1 pound rotini pasta
1 cup mayonnaise
1/2 cup dill pickle juice
1/4 cup ranch dressing mix (dry packet)
1 tablespoon yellow mustard
1 teaspoon dried dill weed
1/2 teaspoon black pepper
2 cups sharp cheddar cheese, cubed
1 1/2 cups dill pickles, chopped
1/2 cup red onion, finely chopped
1/4 cup fresh dill, chopped
Instructions
Cook the rotini pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop cooking. Set aside.
In a large bowl, whisk together the mayonnaise, pickle juice, ranch dressing mix, yellow mustard, dried dill weed, and black pepper until smooth. This is your dressing.
Add the cooled pasta, cubed cheddar cheese, chopped dill pickles, and chopped red onion to the bowl with the dressing.
Gently fold all ingredients together until the pasta and mix-ins are evenly coated with the dressing.
Stir in the fresh chopped dill.
Cover the bowl and refrigerate for at least 2 hours before serving to allow the flavors to meld.
Notes
For a tangier flavor, add 1/4 cup of finely chopped sweet pickles along with the dill pickles.
If you prefer a lighter dressing, substitute half of the mayonnaise with plain Greek yogurt.
You can prepare the dressing up to one day ahead of time.
