Make handheld cookies that capture the rich, sweet flavor of traditional pecan pie. These cookies feature a soft, buttery base topped with a gooey caramel-pecan filling, offering an easy alternative to baking a full pie.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup light brown sugar, packed
  • 1/2 cup heavy cream
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1 1/2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form the cookie dough base.
  4. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between them.
  5. In a small saucepan, combine the brown sugar, heavy cream, and melted butter. Heat over medium heat, stirring constantly, until the mixture just begins to boil. Remove from heat immediately.
  6. Stir the chopped pecans into the hot caramel mixture.
  7. Spoon about one teaspoon of the pecan filling mixture onto the center of each cookie dough ball.
  8. Bake for 10 to 12 minutes, or until the edges of the cookies are lightly golden and the filling is set but still looks slightly gooey.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, slightly underbake them; the filling will firm up as they cool.
  • You can toast the pecans lightly before adding them to the filling for deeper flavor.
  • These cookies are excellent served slightly warm.
