- 2 cups fresh peaches, diced
- 1 cup fresh cherries, pitted and halved
- 1/2 red onion, finely diced
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Zest of 1 lime
- Juice of 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Prepare all fruit: dice the peaches, pit and halve the cherries. Place them in a medium bowl.
- Add the diced red onion, minced jalapeño, and chopped cilantro to the bowl with the fruit.
- Zest the lime directly over the mixture, then squeeze in the fresh lime juice.
