Make this simple, comforting pasta dish in one pot for easy cleanup. It features chicken in a creamy tomato sauce.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 8 ounces dried pasta (penne or rotini work well)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 4 to 5 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion to the same pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the diced tomatoes (with their juice) and the chicken broth. Bring the mixture to a simmer.
  5. Add the dried pasta, Italian seasoning, salt, and pepper to the pot. Stir well.
  6. Return the heat to medium, cover the pot, and cook for 10 to 12 minutes, stirring occasionally to prevent the pasta from sticking, until the pasta is nearly tender.
  7. Stir in the cubed cream cheese until it melts and the sauce becomes creamy.
  8. Return the cooked chicken to the pot. Stir in the Parmesan cheese until melted and combined. Cook for 1 to 2 minutes until the chicken is heated through.
  9. Remove from heat. Garnish with fresh basil before serving.

Notes

  • If the sauce seems too thick, add a splash more broth or water until you reach your preferred consistency.
  • You can substitute heavy cream for the cream cheese for a different type of richness, using about 1/2 cup added at the end with the Parmesan.
  • Use rotisserie chicken if you want to skip browning the raw chicken; add it in step 6.
