Make this flavorful Cajun sausage pasta in a single pot for quick cooking and easy cleanup. It features a spicy, creamy sauce perfect for a weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound smoked andouille sausage, sliced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (or more, to taste)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 3 cups chicken broth
  • 12 ounces dried penne or rotini pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sliced sausage and cook until browned, about 4 to 5 minutes. Remove the sausage with a slotted spoon and set aside.
  2. Add the chopped onion to the same pot and cook until softened, about 3 minutes. Add the minced garlic, Cajun seasoning, thyme, and pepper. Cook for 1 minute until fragrant.
  3. Pour in the diced tomatoes (with their juice) and the chicken broth. Bring the mixture to a boil.
  4. Add the dry pasta to the pot. Stir well to submerge the pasta. Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.
  5. Stir in the heavy cream and the cooked sausage. Cook uncovered for 2 minutes until the sauce thickens slightly.
  6. Remove the pot from the heat. Stir in the Parmesan cheese until the sauce is smooth and creamy.
  7. Serve immediately, garnished with fresh parsley.

  • Adjust the amount of Cajun seasoning based on the saltiness and spice level of your specific blend.
  • If the sauce seems too thick after adding the cheese, add a splash of milk or extra broth to reach your desired consistency.
