Cook chicken and rice together in one pot for a flavorful, easy weeknight dinner with bright lemon and fresh herb notes.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 2 cups chicken broth
  • 1/2 cup water
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped

Instructions

  1. Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides, about 5 minutes. Remove chicken and set aside.
  3. Add onion to the pot and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in the rinsed rice, oregano, thyme, salt, and pepper. Cook for 1 minute, stirring constantly.
  5. Pour in the chicken broth and water. Bring the mixture to a boil.
  6. Return the browned chicken to the pot. Reduce heat to low, cover the pot tightly, and simmer for 18 to 20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  7. Remove the pot from the heat. Let it stand, covered, for 5 minutes.
  8. Fluff the rice gently with a fork. Stir in the lemon zest, lemon juice, parsley, and dill.
  9. Serve immediately directly from the pot.

Notes

  • Rinsing the rice removes excess starch, helping the grains stay separate.
  • Use chicken breasts instead of thighs, but reduce the simmering time slightly if they are thin.
  • For extra flavor, add 1/2 cup of frozen peas during the last 5 minutes of simmering.
