  • 1.5 lbs smoked sausage (kielbasa or andouille), sliced into 1-inch pieces
  • 2 lbs Yukon Gold or red potatoes, quartered or cut into 1-inch chunks
  • 1 large yellow onion, cut into wedges
  • 1 red bell pepper, cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the cut potatoes, onion wedges, and bell pepper pieces.
  3. Drizzle the vegetables with 2 tablespoons of the olive oil. Sprinkle with half of the Italian seasoning, half of the garlic powder, half of the salt, and half of the pepper. Toss until everything is evenly coated.
  4. Spread the seasoned vegetables in a single layer on the prepared baking sheet.
  5. In the same bowl, toss the sliced sausage pieces with the remaining 1 tablespoon of olive oil, the remaining Italian seasoning, garlic powder, salt, pepper, and the paprika.
  6. Arrange the seasoned sausage pieces among the vegetables on the baking sheet, ensuring everything has some space for even roasting.
  7. Roast for 25 minutes.
  8. Remove the pan from the oven and carefully toss the sausage and vegetables with a spatula.
  9. Return the pan to the oven and roast for another 10 to 15 minutes, or until the potatoes are tender and lightly browned and the sausage is heated through and slightly caramelized.
  10. Serve directly from the pan or transfer to plates.

Notes

  • If you prefer softer potatoes, you can microwave the cut potatoes for 3 minutes before tossing them with the oil and spices.
  • Use sweet Italian sausage or smoked chicken sausage for different flavor profiles.
  • Add other sturdy vegetables like broccoli florets or Brussels sprouts during the last 15 minutes of cooking so they do not burn.
